These burritos are a delicious labor of love! They are a little time-consuming, but they are beyond delicious and one of our favorite meals! Add in bacon for that extra oomph!

Chicken Avocado Ranch Grilled Burritos
Creamy and delicious chicken ranch burritos
Servings: 4 people
Ingredients
- 1 lb boneless skinless chicken breasts cut into chunks
- 1 packet dry taco seasoning
- 4 extra large fluffy flour tortillas
- 2 ripe avocados, cut into chunks
- 1/4 cup sour cream
- 1/4 cup bottled ranch dressing
- 1 cup shredded Mexican Blend cheese
- 1/4 cup chopped cilantro
- 1/4 cup olive oil
- 8 strips cooked bacon, crumbled *optional
- 4 tbsp salsa *optional, for garnish
Instructions
- Cut chicken breasts into bite-size strips or chunks
- Heat 2 tbs olive oil in skillet
- Season chicken with the dry taco seasoning, add to skillet and cook till done, about 4-5 minutes per side
- Heat tortillas according to package instructions (I usually just place a stack with a damp paper towel on top in the microwave for 1 minute)
- Working individually, coat each tortilla with a layer of sour cream and a layer of ranch (I am very generous and use a full container of sour cream for these)
- Sprinkle cheese evenly over sour cream and ranch mix
- Sprinkle cilantro and chopped avocado pieces on top
- Add cooked chicken
- Add crumbled bacon (optional)
- Roll and fold tortilla, grill in skillet with olive oil on medium heat till lightly browned and crisp, about 2-3 minutes per side.
- Serve with your favorite salsa on top
You can garnish with salsa, a dollop of sour cream and a little sprinkle of cilantro or avocado chunks! Seriously, this is one of our favorite meals and so delicious especially in summer.
