Mom’s Noodle Kugel

Ingredients
- 1 pkg egg noodles
- 5 eggs
- 1 cup brown sugar
- 1 1/2 cup sliced apples
- 1 1/2 cup raisins
- 16 oz. cottage cheese
- 1/2 cup sour cream
- 1/4 cup butter
- 1 1/2 tsp. cinnamon
Instructions
- Cook noodles, drain and coat with melted butter
- Beat eggs, add brown sugar and cinnamon, beat well
- Mix in cottage cheese and sour cream
- Stir in raisins
- Grease a 2 qt. glass casserole dish
- Layer noodles, sliced apples, brown sugar mixture
- Bake uncovered at 350 degrees 30 to 40 minutes
In honor of Hanukkah, I’m posting my mom’s famous noodle kugel recipe. My stepdad has been in our lives since I was 10 or so, so we always celebrated Hanukkah and Passover with him, and my mom, who is a tremendous chef, mastered all of the traditional holiday dishes, so while it was not necessarily a religious celebration for us, it was definitely a cultural (not to mention delicious!) one. I would never dare try to master her latkes, but this noodle kugel dish is one I think I can definitely pull off, and I think I’m going to add it to my November and December holiday menu!
