My husband loves coconut, so these are a nice treat for him! I like to add some flour to the Bisquick mix, and you can serve with whatever dipping sauce you love: honey mustard, ranch dressing, sweet Thai chili, the list goes on!
Coconut Chicken Tenders
Light and crispy coconut chicken fingers

Ingredients
- 1 cup vegetable oil
- 1 1/2 lbs. chicken tenderloins
- 2 large eggs
- 1 tsp. soy sauce
- 1 tsp. Sriracha
- 1/2 tsp. garlic powder
- 1/4 tsp. ground ginger
- 1 1/2 cups Bisquick
- 1/4 cup flour
- 1 cup shredded sweetened coconut
- 2 tbsp. chopped fresh cilantro leaves
- salt and pepper to taste
Instructions
- Heat oil in large skillet
- Season chicken with salt and pepper
- In bowl whisk eggs, soy sauce, Sriracha, garlic powder, ginger and 2 tbsp. water
- Mix together Bisquick, coconut and flour (I like to add flour for extra crispiness because I like things fried, you do not have to add flour)
- Dredge each tenderloin in egg mixture, then toss in the Bisquick mixture till fully coated
- Cook chicken till lightly crispy and tender, about 4 minutes on each side
- Garnish with cilantro, extra coconut, and sesame seeds, if desired
