Chicken Almond

This is one of my mom’s favorite recipes, and it’s also a great dish for company! It’s quite elegant, and can be served with a really nice Caesar or Balsamic salad and steamed fresh green beans or whatever veggie side you wish. For a full meal I love to serve it with Uncle Ben’s Wild Rice mix, this pairs super well with the chicken flavors!

Chicken Almond

An elegant chicken dish perfect for company

Ingredients

  • 6-8 chicken breasts
  • 2 cans cream of chicken soup
  • 1/2 cup mayonnaise (I use a little more than this)
  • 1 can sliced water chestnuts
  • 3/4 cup sliced almonds (divided)
  • 1 cup grated cheddar cheese
  • 1/2 cup breadcrumbs

Instructions

  • Simmer chicken breasts in water with seasoning OR I also like to throw them in the crockpot (my quickest way to cook chicken) with some chicken broth and seasoning till tender
  • You can either chop the breasts into chunks or place them whole into a shallow, greased baking dish
  • Cover breasts with 1/2 cup sliced almonds and the can of water chestnuts
  • Mix together cream of chicken soup and mayonnaise (I add quite a bit more of the mayonnaise than is called for to the sauce but I like it thick and rich)
  • Pour over the covered breasts
  • Top with the grated cheese, remainder of almonds and bread crumbs to suit
  • Bake uncovered for 30 minutes at 350 degrees
